Tested with WP 7.0.3
Tried a test this evening setting up a product with a new uploaded image for it. Published the product, then deleted the product and emptying the bin. Everything worked fine, the new image that I had uploaded to use with this test product had been removed from the media library.

Just be carefull. In order for the images to be deleted you have to delete permanently the product!
